I never wanted to celebrate getting one more year older. So birthdays have always been big No No for me. But today I did celebrated my birthday and being raw vegan for 6 months. During these months my ageing seems to have reversed. I have lost a lot of weight, my wrinkles have lessened and I feel so alive and full of energy and much younger and healthier than ever before. So today i celebrated my re-birthday with this gorgeous apricot cake

Ingredients:
- 1cup cashews
- 1,5 cup almonds
- 1,5 cup dried apricots
- 2 Tbsp lemon juice
- 1 cup coconut flesh
- 1tsp vanilla extract
- 1Tbsp agave syrup
- 1Tbsp lemon zest
- 9 apricots
- 1Tbsp maple syrup
Soak the cashews and dried apricots for at least two hours. I used non organic apricots in this recipe, because I wanted the cake to have that bright orange apricot colour. But feel free to use the brown ones if you wish


The crust:
Put the almonds, half of the soaked apricots and 1 Tbsp lemon juice in the food processor and process until sticky mass. Press into the cake mold
The filling:
In high speed blender blend until smooth cream:
6 fresh apricots, 1/4 of the dried apricots, cashews, coconut flesh, vanilla, lemon zest, 1 Tbsp lemon juice and agave syrup
Pour onto the crust and let set in the freezer for two hours
The glaze:
In high speed blender blend 3 fresh apricots, 1/4 of the dried apricots, 1 Tbsp maple syrup.
You can even use little bit of xantham gum or irish moss to make the glaze thicker in consistency
Pour on the top of the cake and let set in the fridge overnight.
Decorate the day after and store in the fridge
