Raw vegan Quinoa bread

Did you miss the real bread feeling while being on Raw food? Well now you don't have to. This quinoa bread came up by an accident, when I had left over quinoa and needed to do something with it. It came out to be just perfect - you'll never miss the taste of a full corn bread again. Take my word for it! Enjoy with my vegan butter or the almond cream cheese.

Ingredients for 10 buns:

  • 2 cups quinoa
  • 3/4 cup banana flour
  • 3/4 cup buckwheat flour
  • 1 cup oats
  • 1/2 cup psyllium
  • 1/2 cup sesame seeds
  • 1 tsp salt
  • 1 tsp xylitol or other sweetener
  • 1 and 1/2 cup water
  • 1-2 tsp caraway ground
  • Soak quinoa for 2 days, change water twice a day
  • Put it in a blender and blend until it turns white, but you can still see the brown pieces
  • Ground oats into flour
  • Put all ingredients into a bowl and make a dough
  • Let set for a while
  • Form small buns about 1cm (half inch) thick
  • Dehydrate for 15 hours on 40 degrees (just bellow 100F)
  • Higher temperature will dry the surface but leave the center too wet
  • You can use oats, buckwheat and banana flour at what ratios you want. Feel free to skip some and replace with the others.
