I grew up with apple strudel and that apple-walnut-cinnamon taste combination. I truly love the taste. And when the cravings hunt you, you need that apple strudel even on a RAW life style. Usually I made a dehydrated plate to roll the apples in, but this time I got intrigued by another idea - to roll the filling inside of the apples. I just had to try it and this came out. I made it yesterday and today I can't stop eating it. It could only get better if I had a vanilla sauce to that 😀

Ingredients for the apple layer:
- 4 big apples
- cinnamon
- 1/2 limeÂ
Slice up the apples on mandoline and spread them overlaying on piece of household foil approx 30*50cm
Powder a good layer of cinnamon over the apples and squeeze half a lime
Ingredients the cream layer:
- 1 cup walnuts
- 1/2 lime
- 1/2 banana
- 1tsp cinnamon extract
- 1/2tsp cardamom
- 1 thumb ginger root
- 2 tbsp maple syrup
Soak the walnuts for 6 hours or so. Place all ingredients in high speed blender and blend until smoots
Spread the cream evenly over the apples.
Crunchy layer:
- 1 handful pecan or walnuts
- 1 handful mullberries
- 1 tbsp coconut sugar
Pulse the ingredients in the food processor until you get crunchy chunks
It's your choice how you place it on the cream layer. Either in lines, or spread evenly.
Roll everything together using the plastic foil. Press quite firmly while rolling, so everything sticks together.
Let set overnight in the fridge. Cut the slices with very sharp knife with the foil still on. Remove the foil on a serving plate.
