
Ingredients for 15 cakes:
- 2 cups hazelnuts, 1/2 cup soaked apricots (preferably organic) for the crust
- 2 cups ground black poppy seeds, 1 cup coconut milk, 1tsp lemon juice, 2tbsp maple syrup, vanilla extract for poppy filling
- 1cup almonds or cashews, 4 tbsp lemon juice, pinch of cardamon, 1-2 tbsp agave syrup for cheese filling
- 1 cup dried plums, 1 tsp cinnamon, 1 tbsp lemon juice for plum filling
- Soak almonds or cashews, apricots and plums for at least two hours.
- Mix all the ingredients for poppy seed filling and let soak for two hours. Add some more flavor in if you wish
Blend hazelnuts with soaked apricots in a food processor until you get sticky mass.
Blend nuts with the ingredients for cheese filling in high speed blender
Blend plums with the ingredients for plum filling in high speed blender
