Who doesn't like soft gingerbread? Ok, my husband doesn't. But he loves hard gingerbread cookies, only he's not allowed to eat them, because he is gluten intolerant. And RAW foodist... So here comes a great compromise - not soft, not hard, something for everyone. The result is lovely and hey, you wanna hear the secret? They taste like heaven together with coffee. A combination to die for 😉
Ingredients for 10 cookies:
- 1,5 cup walnuts
- 1 pear (Conference is best)
- 0,5 dl oats
- 0,5 dl buckwheat flower
- 0,5 dl coconut flower
- 2 Tbsp almond butter
- 1 Tbsp (or more) gingerbread spicemix)
- 2Tbsp maple syrup

- Blend the pear, almond butter, walnuts, spices and maple syrup in a food processor
- In a bowl mix in the dry ingredients
- Optionally ad in raw coca nibs, raisins or other dried fruits
- Let set a while, add some more flour if it is too loose
- Form small cookies and place on a dehydrator shelf
- Dehydrate overnight
Tips: If you have very juicy pear, just add more of the dry ingredients. Conference pear is not so juicy
