Kiwi - to me a strange fruit. When perfectly ripe, it tastes just amazing. But how often do you get the chance to find those perfectly ripe kiwis? Mostly they are sour and tastes like... well, not so amazing, leaving your mouth and lips with burning feeling. So I usually do not buy them. But this week I found a basket full of those perfectly ripe fruits, and I just had to take them home with me. Unfortunately I did not notice how big the basket was, but I guess it is pretty much standard size for all markets. If you are lucky like me, just grab one too and get set to make an easy kiwi cake, that makes your friends love you even more ๐Ÿ™‚ But don't be shy,  if you only can buy lose kiwis, get lots of them, you're gonna need it for this cake ๐Ÿ˜€ I even spiced up the tart with matcha powder, that gives it a nice sting and makes the taste of it more "adult". Matcha is even a super food loaded with amino acids, antioxidants and fibers. This cake even works as a perfect Easter cake

Ingredients crust:

  • 1 cup rolled oats
  • 1 cup mulberries
  • 1 cup hazelnuts 
  • 1/2 cup coconut oil
  • 1/4 cup water

Put all ingredients in a food processor and process until well combined.

Ingredients creamy layer:

  • 1 cup cashews
  • 1 tbsp matcha powder
  • 1 banana
  • 1 peeled lime 
  • 2 tbsp agave syrup
  • 4 kiwis

Soak cashews overnight. Put all ingredients in a high speed blender and blend until smooth

Press the crust mass on the parchment paper at the bottom of a cake mold. Pour part of the cream filling on the crust, then cover with pieces of kiwi and pour rest of the cream on top. Garnish with more kiwi and lime
