


After moving to Sweden I became a huge fan of saffron. Both the colour and the taste are so appealing in sweet dishes like the traditional swedish pastry saffron length or in savory meals. I wanted to create a RAW alternative to the saffron length and I can tell it turn out super delicious. I cheated though on this one and I bought the almond paste ready to use. I will in a future make my own, that is not full of white sugar and put a recipe here too. But for now the bought one will do.
Roll out 400g almond paste to a thin plate
Ingredients for the filling:
- 1 1/2 cup cashews soaked overnight
- 3 tbsp agave syrup
- 0,5 g saffron
- 1 clove of lemon
- 3 tbsp coconut oil
Tips: The cashews have to be soaked for at least 7 hours to be as wet as possible for creamier texture without any more water added


Put all ingredients in a high speed blender and blend them really creamy
Let set in the fridge for couple of hours
Spread the filling on top of the almond plate
Roll to a log using the paper underneath

Using big scissors cut the top of the roll like on the pictures and tilt the cut parts slightly to opposite sides to expose the filling.



Garnish the length with pieces of bitter (or sweet) almonds
Raisins, goji berries or other dried fruits of your choice
Tips: The garnish will stick better to the roll if you brush the surface with some liquid coconut oil and then put in the fridge immediately after garnishing
