Couple of weeks ago I made this amazing cake out of strawberries and sour cherries I got from a friend. I wil never get tired of those fruity tart flavours combined with sweet and soft creams. That contrast in your mouthy is so vibrating. Never dull, never too sweet, never too aggressive. The perfect combo och gentle and cheaky 🙂
You can of course combine the fruits however you like it, there is probably no limit for what kind of combinations you can create. Just make sure you use watery enough fruits for the jelly, or add some water to the mixture

Ingredients crust:
- 2 cups haze nuts
- 200g (7 oz) date paste or dates
process in a food processor untill combined
Cherries and coconut to garnish
Ingredients chocolate cream:
- 3 cups coconut milk
- 2/3 cup cashews
- 1/4 cup maple syrup
- 1/2 cup coconut oil
- 2/3 cup cocoa powder
Ingredients strawberry jelly:
- 500g (about 1 lbs) strawberries
- 1,5 Tbsp lime juice
- 1,5 Tbsp coconut sugar
- vega gel or similar

- Press the crust mixture into a cake mold. Use parchment paper at the bottom
- Blend all the ingredients for the cream untill smooth. Don't forget to soak the cashews for couple of hours before
- Pour the cream mixture over the crust and let set in the freezer
- Crush the strawberries in a food processor and mix them with a vegan gel of your choice. Use the instructions on the packaging to mix with your brand. Mine I mixed with couple of table spoons of boiling water, let the powder desolve and then I whipped the liquid into my crushed strawberries. If you do not have any gel, you can use chia seeds to make the jelly-ish consistency. Start with couple of tablespoons, wait for 15 minutes and add more if it still is too liquid.
- Place some cherries on the topp of the chocolate cream
- Pour over the strawberry mixture
- Let set in the fridge
- Garnish with more fruits and for example desicated coconut
