Saffron and lingon... Is there any combination that is more Swedish and Christmasy than this? Well, at least not for me. One of the best things ever if you ask me... And of course I wanted to create a delicious pannacotta to make it complete and perfect, since pannacotta is just beyond heavenly to have on your tongue. This is so simple recipe, that you would preffer to do it this way even if you were not a RAW foodie.

Ingredients for 4:
- 2 cups cashews
- 1/2 cup coconut oil
- 2 Tbsp maple syrup
- 3Tbsp vanilla extract
- 2 packs of Saffron
- crushed lingon berries
- Put cashews (not soaked) into a high speed blender
- Pour just enough water to cover the nuts, rather less than more
- Add all the other ingredients but lingon
- Blend on highest speed untill the mixture gets warm and really smooth. Could take couple of minutes, it's worth waiting for
- Pour over crushed berries and let set in the fridge over night

You can have cacao powder instead of the saffron, or just vanilla extract. And of course you can use any fruits you like.
