Beetroots... A very controversial issue for me. I am not so fond of beetroots, but I can't deny that the nutritional value is so significant, that we shouldn't avoid them. So my mission is to create dishes that I would appreciate, even though they are made of beetroots. Here's one of them.

- This is very simple dish, that can be adapted after your choice with variety of spices and seasonings
- The basic recipe is 2 cups minced beetroot, salt and 1 Tbsp psyllium
- Then you can play with whatever flavorings you want - garlic, herbs, soy sauce, teryiaki sauce, you name it
- Let set until it gets a consistency that sticks together well.
- Wrap into lettuce leaves
