We have one non-vegan exception in our life style and that is our own quail eggs. Our quails spend the warm part of the year in a huge aviary, where they can behave naturaly. During the winter months I put them in our garage to spare them the freezing weather. During the whole year they get to eat sprouted barley grass, meal warms and roaches beside their regular food. Quail eggs have many benefits for the imune system and are 2,5-5 times more nutritious than hen's eggs when it comes to vitamines and minerals. For a vegan may be the best thing is the high level of B12 vitamine.

I have always been a egg lover and always had my own happy, free range laying hens. Now, when we eat RAW food, we only keep some quails for supplying us and our dogs with some eggs. We do not eat the eggs raw, but there are studies telling that it is the best way how to get the all benefits of them. They also recommend to ground the egg shells and use the powder in your meals because of its high content of minerals, especially calcium.

Here is one of our raw + egg recipes...

Ingredients 2 servings:

  • Small red cabbage head
  • Small cauliflower head
  • 1 handfull of pumpkin seeds
  • 1 handful of raisins
  • 20 quail eggs (or 4 chicken eggs)
  • Yellow curry powder, black pepper, turmeric
  • 1 cup coconut milk

 

Grate the cauliflower to a rice-like pieces

Mix together eggs, cauliflower rice and pinch of salt and using a pan with olive oil, let the eggs quickly set on a medium heat. The trick is not to overdo them, the cauliflower should not get warmer than luke warm. If you heat up the eggs a little second and then take the pan from the heat while stirring, the eggs will set firm very quickly in the after heat. You don't want them to set too hard and dry, the texture should remain creamy.

In a blender blend coconut milk and the spices untill luke warm. You can also use the pan on a very low heat. If you use canned coconut milk, it as been uppheated anyway, and the spices come out better in little warmer temperature.

Add the pumpkin seeds and raisins in the mixture and spread the mixture over the slices of the red cabbage

Pour over the curry sauce and serve.
