One day, my husband is going to kill me for my cauliflower passion. But I just can't get enough of this kind of food - it's rice-ish, creamy, satiating, warm and you can vary it in so many different ways. And he still likes it, so I am planning on doing it as often as I dare 😀
Ingredients for two servings:
- 1 cauliflower
- 1 parsnip
- 1 carrot
- 1 can coconut cream (or make your own from young coconut flesh)
- 3 handfuls of green peas
- 2 Tbsp dried mushroom powder
- salt, garlic
- Garnish (here avocado, red pepper, green onions and dried paprika)

- Put cauliflower, carrot and parsnip in food processor and process until rice-like consistency
- Blend rest of the ingredients in high speed blender until smooth. Spice up more with salt, garlic, chili if you wish
- Mix all together and place in a sous vide or an oven on max 45 degrees (115F) for couple of hours
- You can even warm it up carefully on the stove until lukewarm
- Enjoy as it is, or adorned with my pRAWmesan cheese
