Curry stew

I love curry, I love creamy texture, I love warm food and I love challenge. This one was a big one - my husband likes neither curry, nor celery. But I must have done something right - it went right down into his belly <3

And what´s best - he even liked the wraps I made of the leftovers. You can find them here

Ingredients:

  • 1 celery (bulb and blast)
  • 2 big carrots
  • handful of goji berries

Ingredients sauce

  • 1 young coconut (flesh and water)
  • 1 tsp turmeric
  • 1Tbsp curry paste
  • 1tsp agave syrup
  • pinch of salt

Grate the celery and carrots, chop the leaves, add soaked goji berries

Blend all the sauce ingredients smooth. Use just 1 cup of water to begin with

Taste the sauce and adjust the amount of spices after your preferences 

Blend everything together, so all the vegetables are covered in liquid. Stir in some more water if needed.

I use my slow cooker to warm up the meal, but you can even put it in the oven or in the dehydrator.

Keep warm for at least 3 hours or more to make the flavours blend and veggies soften up a bit
