Fresh and spicy green peas soup

This soup has it all - it's very satiating, it's very nutritious, it's warming in the cold weather and it's fruity fresh and spicy the gentle way - inspired by vietnamese kitchen. My version is very mild, you can always spice up your soup and life 🙂

Ingredients 2 servings:

  • 3 cup green peas
  • 2 tbsp vegetable stock powder
  • stem from 1 green onion
  • 1 small parsnip
  • 2 cloves garlic
  • 1 thumb ginger
  • juice from 1 lime
  • 1 cup water
  • 1 tsp coriander
  • 1 tsp salt
  • 2 tbsp olive oil (optional)

A whole bunch of ingredients, but it barely can be easier to make the soup than this.

Put all the ingredients in a high speed blender and blend

Pour into a pot and on very low heat and under constant stirring warm up to max 45 degrees (115F)

You can also blend until warm, but I don't like this method of two reasons:

  1. Blending ads an air into a mixture and oxidize it. The longer you blend, the less vitamins
  2. I don't like the metallic taste of the mixture when blending until warm

Put in a warm bowl (pour hot water in the bowl before serving) and garnish with lime, hemp seeds, asparagus, red bells, radishes (these go exceptionally well with this soup)
