
Ingredients:
- 1/2 cup deodorised coconut oil
- 1/2 cup soaked cashews
- 1/4 cup pumpkin seed milk
- 1/4 cup olive oil
- 1 tsp apple cider vinegar
- 1tbsp nutritional yeast
- 1/2 tsp salt
- 1/2 tsp turmeric
Blend all ingredients in high speed blender until smooth thick consistency. Refrigerate.
Tips: This butter is too good to be true. It´s so much better than real butter. So be careful not to eat too much of it. It is high in healthy fats and therefore highly saturating together with raw bread or cracker. But it should not be the main part of your food intake. Save some space for fruits and veggies 🙂
Tips: Any nut milk will do in this recipe, but personally I think the pumpkin seed milk tastes best in here. Just take 1 cup of pumpkin seeds and two cups of water, blend in a high speed blender and then pour through a piece of cloth or nut milk bag, to separate the milk from the solid parts.
